What is YESTEIN®?

YESTEIN® is a complete, fermentation-derived yeast protein (Saccharomyces cerevisiae) with a PDCAAS of 1.0 and a full essential amino acid profile that rivals traditional whey. Purpose-built for protein-fortified foods, beverages, and dietary supplements, it is a high-performance, dairy-free alternative that delivers on both quality and nutrition. 

YESTEIN® matches whey protein in PDCAAS (both score 1.0) and provides a complete amino acid profile, including at least 20% BCAAs. The primary distinction is that YESTEIN® is fully vegan and fermentation-derived, making it appropriate for plant-based product positioning where whey is not suitable. Whey digests faster, while YESTEIN® offers a more sustained release profile.  

Compared to pea protein, YESTEIN® offers a higher protein quality score (PDCAAS 1.0 vs. approximately 0.82 for pea), a more complete essential amino acid profile, and a different flavor and texture profile. Pea protein is often limited in methionine and cysteine, while YESTEIN® meets all essential amino acid requirements without blending. Both can be used independently or in combination.

What applications work best?

It is especially well suited for protein powders, bars, meal replacements, savory snacks, crackers, soups, and sauces, where its mild savory flavor profile and good dispersibility translate well into finished products. The NURA technical team can support application testing and formulation trials across any of these formats. 

YESTEIN® has a mild savory protein profile that can work well in both savory and certain sweet applications, depending on the flavor system and use level. Final sensory performance will depend on the formulation, processing conditions, and target application.  

YESTEIN® disperses cleanly in powder and bar applications with no special handling required. A key functional advantage is its low viscosity, which keeps beverage and liquid applications smooth and easy to process, without the thickening or gelling issues common with some plant proteins.
